Deer heart, shish-kabob style
Clean heart; remove fat and veins from crown,
Cut heart into cubes approximately ¾ (when encountering the thin part allow piece to be folded in half to achieve desired thickness)
Place heart into a Ziploc bag with the follow ingredients, starting with the lemon juice first
½ cup lemon juice, mix in bag coating heart with juice
Then add and mix again
¼ cup fresh chopped parsley
2 med. cloves garlic sliced thin
½ cup olive oil
Teaspoon of salt
Marinate in refrigerator overnight (or a few days)
Place heart on skews
Bake in oven at 350° approximately 25-30 minutes
Or grill on high 20 approximately minutes
